Well preparation for tonight's meal actually started last night as it is starting to feel like winter and I thought I would break out the Crock Pot for a little slow cooking.
Having recently joined Boston Organics (http://www.bostonorganics.com/), I received the all vegetable box and found myself in need of meals that used, well, a lot of vegetables. I also had a little more than a pound of steak tips in the fridge and so a beef stew idea was born.
To make this, I simply dumped the entire package of steak tips in (the less expensive stew meat would also work nicely), then add the following:
2-3 medium red potatoes (chopped)
One beefsteak tomato (diced)
3 cloves of garlic (minced)
1 small onion (diced)
5-6 full size carrots (chopped)
One medium box package of beef broth
Salt and Pepper
Seasonings to taste (I used my go to rosemary and garlic spice shaker)
I cooked it on high for an hour (stirring occasionally) and then let it sit on low heat all night (10 hours) to really stew. When I woke up I turned the Crock Pot off and let it cool a bit before putting the inner part of the pot in the fridge (lid on) to let cool - and hopefully thicken a bit - before reheating for dinner tonight.
We will see how it tastes this evening as I did not do this from recipe but what I really enjoyed about this is that it was easy to include almost any vegetable I had around. Admittedly potatoes and carrots are pretty standard stew ingredients, but you could just as easily have added green beans or something else instead to make it your own.
