Last night's creation

As I said yesterday, I was thinking about making something a little Middle Eastern. While last night's meal didn't necessarily stretch my cooking abilities or involve a million pots and pans, this is something you could easily do in your apartment and involves a myriad of delicious flavors for not a lot of work.

First of all, I think Naan is underrated. For this meal, the Naan was much better than pita bread would have been - the far more popular and widely known of the "exotic" breads. It's doughy-ness really added to the meal and provided a much more solid wrap for the food.

Now that that's out of the way, this meal is pretty quick and dirty. All you need is a small package of tabbouleh, a small package of artichoke and spinach hummus, a package of Naan and one large chicken breast. Cut up the chicken breast for kabob sized pieces and let sit in teriyaki sauce for a bit.

Consider this a good time to pour a glass of wine and catch up on your day with your roommate or live-in food tester or if you have the place to your self, walk away and cue up your favorite program or movie. It doesn't need too long to soak though because chicken is a good sponge of a food.

Once they've soaked for a bit you can skewer them and grill them or cook them on the stove top, but make sure to use a lid for your pan to keep in the moisture and not dry out the chicken. This way you keep in all the teriyaki flavor too.

Once the chicken is well cooked (no pink!) take the Naan, smear on some of the hummus so it acts as a good base, then put the tabbouleh on top of that, followed by the chicken and then roll to wrap it all up and enjoy!

This took a mere 20 minutes to whip up and I used a chicken breast leftover from a previous night's meal. (My food-tester really enjoyed this one as well.) And it's fun to eat with your hands!
